
My husband made this drink for us back in December while trying out recipes to identify our Christmas cocktail for this year. We really liked it, but it didn’t feel Christmas-y enough. Instead, we felt it was a good winter cocktail. The pomegranate feels very seasonal, the color is uplifting, it has just the right about of herby-ness from the rosemary and it tastes light and refreshing. It’s the perfect cocktail to brighten up a winter evening!!
The Recipe (makes 1 serving)
1 1/2 oz Pomegranate Juice
1 oz Gin
Juice of 1/2 Lime
1 TBSP Rosemary Simple Syrup *
Club soda (about 3 oz)
Rosemary sprigs, Pomegranate arils and/or orange wedge, for garnishClub Soda (3 oz)
*(To make Rosemary Simple Syrup – combine 1/4 cup water, 1/4 cup sugar and 1 sprig of rosemary. Heat to dissolve sugar and then let sit to cool).
Combine the first 4 ingredients into a cocktail shaker with ice. Shake well. Strain into a rocks or martini glass. Top off with cold club soda and garnish.
